Recipe: Blender Banana Cake (9-inch square, Family Circle magazine, 1983)

BLENDER BANANA CAKE

1 1/2 cups sifted all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
About 3 ripe bananas
1 cup vegetable oil
2 eggs

Preheat oven to 350 degrees F. Grease a 9x9x2-inch baking pan.

Sift flour, sugar, baking soda and salt into a medium-size bowl; set aside.

Whirl bananas in container of electric blender to make 1 cup puree. Add vegetable oil and eggs; whirl until well blended. Pour banana mixture all at once into dry ingredients; mix just until blended. Pour into prepared pan; rap on table to remove any large bubbles.

Bake in preheated moderate oven (350 degrees F) for 45 minutes or until center springs back when lightly pressed with fingertip. Cool in pan on wire rack; serve right from pan.

Makes 1 (9x9-inch) cake
