Recipe: Simple Squash Soup (using frozen butternut squash)

SIMPLE SQUASH SOUP

1 (10 oz.) pkg frozen pureed butternut squash (or make your own)
2 cups chicken broth
4 green onion, finely chopped
1 tsp. ground cumin
1/4 cup Stilton cheese
Ground black pepper to taste
Garlic Croutons (optional, for serving)

Combine squash puree and chicken broth in a saucepan. Cook covered until squash melts completely (if using homemade squash puree just simmer until heated through).

Stir in the green onion, cumin and black pepper. Remove from heat, pour into bowls and top with crumbled Stilton cheese and garlic croutons.
