Recipe: bleskiver med g r

Happy to oblige - I m neither Danish-American nor Danish but the recipe is taken from a popular Danish cookbook.

Aebleskiver with yeast ( bleskiver med g r)

1/2 stick butter or margarine
1 c milk
1/2 c cream or half-and-half
2 tbsp dry yeast
2 cups flour (approximately)
1 tbsp. sugar
1/2 tsp. salt
1 tsp. crushed cardamom seeds or 2 tsp grated lemon zest
2-3 eggs
butter or margarine for cooking

Melt butter. Add milk and cream and heat a little. When the mixture is lukewarm, pour into bowl and sprinkle yeast and a teaspoon of sugar over it. Let stand for a few minutes. Add two thirds of flour, rest of sugar, salt and cardamom or lemon zest and eggs. Stir until smooth. Add rest of flour and stir. Cover and let rise for 45 minutes. Pour a little melted fat into each cup of the pan and warm. Pour the batter into a jug, then pour it from the jug into the cups - they should be three-fourths filled. Start turning the aebleskiver with a knitting needle or something similar as soon as they have puffed up somewhat and the underside has begun to settle.
