Recipe(tried): Here s one recipe

This is a much-tested recipe but I m translating it from metric measurements so I hope my conversation table is accurate. (I assume you know you need a special pan for aebleskiver).

bleskiver

2 cups plain flour
1 3/4 cups buttermilk
3 eggs, separated
1/2 stick butter, melted
1 tbs sugar
crushed seeds from a few cardamoms
OR zest of a lemon
1/2 tsp baking soda
a pinch of salt
oil or other fat for greasing the pan

Everything except egg whites and oil is put in a bowl and mixed well, then put aside for half an hour or so. Then the whites are whipped until they form stiff peaks and folded gently into the batter. Heat the pan and grease the cups. Pour batter into each cup (they should be three quarters filled). Keep the heat moderate and start to turn the aebleskiver as soon as a crust begins to form (this is frequently done with a knitting needle). Turn them several times, they should be almost completely round. They take a few minutes. Best served warm, perhaps with jam. They are frequently dusted with confectioners sugar. Sometimes a small piece of an apple is inserted into the doughnut before they are turned for the first time; that is where the name comes from, I think (aebleskiver = apple slices).
