Recipe: Blueberry-Lemon Loaf (using dried blueberries or currants) (bread machine)

Breads - Bread Machine
BLUEBERRY-LEMON LOAF

1 cup plus 1 tablespoon water
1 1/2 teaspoons grated lemon peel
2 tablespoons margarine or butter, softened
3 cups bread flour
2 tablespoons dry milk
3 tablespoons sugar
1 1/2 teaspoons salt
2 teaspoons bread machine yeast
1/3 cup dried blueberries (or 1/3 cup currants)

Measure carefully, placing all ingredients except blueberries in bread machine pan in the order recommended by the manufacturer. Add blueberries at the Raisin/ Nut signal or 5 to 10 minutes before last kneading cycle ends.

Select Sweet or Basic/White cycle. Use Medium or Light crust color.

Remove baked bread from pan and cool on wire rack.

Serving Ideas: For a special treat, spread with softened cream cheese.

Makes one (1 1/2 pound) loaf
