Breakfast Burritos

This makes enough for 4, but it doubles easily.
My kids love this in the morning before school.

6 eggs
2 cups Shredded Taco Cheese, divided
2 Tbsp. butter or margarine
8 (6-inch or 7-inch) flour tortillas
1 cup chopped tomatoes
1/2 cup sliced black olives
1/2 cup chopped green onions
Sour cream (optional)

Combine eggs and 2 tablespoons water; stir in 1 cup cheese.

Melt butter in large skillet over low heat. Add egg mixture and cook until eggs are desired consistency, stirring gently.

Heat tortillas according to package directions. Divide egg mixture between hot tortillas; top with tomato, olives, onions and remaining cheese. Fold tortillas burrito-style. Serve with sour cream, if desired.

Microwave directions:
Microwave butter in 2-quart glass bowl on HIGH 30 seconds or until melted. Add beaten eggs and 2 tablespoons water; microwave on HIGH 2 minutes. Stir in 1 cup cheese and microwave 2 minutes more, stirring once. Stir then let stand 1 minute to complete cooking. Assemble burritos as above recipe directs.
