Mexican Lasagna
12 corn or flour tortillas
1 1/2 pounds of ground beef
1 package of ricotta cheese
1 package of shredded mexican blend cheese (Kraft Fiesta cheese is an example)
1 can diced tomatoes w/chiles
2 eggs
1 envelope of taco seasoning
1 can of tomato sauce
Brown the ground beef, drain and add taco seasoning, diced tomatoes and tomato sauce. Simmer all for about 5 minutes.
While simmering mix together the ricotta cheese and two eggs in a separate bowl.
When beef mixture is done spread half of it in a 9x13 pan. Top with half of the tortillas. The tortillas will overlap. You can use more or less if you choose. Top the tortillas with half of the ricotta cheese mixture and then half of the shredded cheese. Repeat with beef, tortillas, ricotta cheese and you should end with the shredded cheese.
Bake in an oven preheated to 350 degrees for 25-30 minutes.
This is very good served with sour cream. You can try different variations. I've used shredded chicken in place of the beef.
