Recipe(tried): Breakfast Casserole, Old World Dutch Pancakes

Breakfast and Brunch
I USE THIS WHENEVER MY KIDS ARE OVER AND THEY ALWAYS ASK FOR IT BEFORE THEY COME.

BREAKFAST CASSEROLE

10 EGGS
1 PINT COTTAGE CHEESE
1 LB. MONTERAY JACK CHEESE, GRATED
1 7 OZ. CAN ORTEGA GREEN CHILIES, CHOPPED (I USE MILD)
1 TSP. BAKING POWDER
1/2 TSP. SALT
1/2 CP. MELTED BUTTER
1/2 CP. FLOUR

MELT BUTTER IN 13X9 PAN. BEAT EGGS UNTIL LEMON COLOR AND MIX WITH THE REST. MAKE AHEAD AND STORE IN REFRIG OVERNIGHT IF DESIRED. BAKE AT 350 FOR 30 MIN AND LET SET 30 MIN. SERVE WITH SALSA. SERVES 6 HUNGRY PEOPLE

HERE'S ANOTHER FAVORITE AT OUR HOUSE!

OLD WORLD DUTCH PANCAKES
IT'S A WONDERFUL EGG CASSEROLE THAT IS SOMEWHAT LIKE YORKSHIRE PUDDING.

3 LG. EGGS
3/4 CP. FLOUR
3/4 CP. 1% MILK (I'VE USED 2% WITH NO EFFECTS)
1 TSP. SUGAR
1 TSP. GROUND NUTMEG
2 TBSP. BUTTER
2 TBSP. POWDERED SUGAR
1 LEMON, CUT INTO WEDGES

PREHEAT OVEN TO 400. IN BLENDER OR FOOD PROCESSOR, MIX EGGS, MILD, FLOUR, SUGAR AND NUTMEG. PLACE BUTTER IN 7X11 INCH BAKING DISH OR SHALLOW 2 QT. BAKING DISH. PLACE IN OVEN AND ALLOW TO HEAT 2-3 MIN. TILL BUTTER IS JUST
MELTED. CAREFULLY POUR IN EGG MIXTURE. BAKE 15-18 MIN. TILL PUFFY AND BROWNED. CUT INTO 4 SERVINGS. DUST WITH POWDERED SUGAR AND SERVE WITH LEMON WEDGES TO DRIZZLE JUICE OVER HOT PANCAKE. YOU CAN ALSO USE SYRUP, JAM ETC.
SERVES 4 PEOPLE.

I ALSO HAVE A RECIPE FOR SAUSAGE BALLS THAT CAN BE MADE AHEAD, FROZEN AND THEN DEFROSTED FOR USE WITH THIS MEAL. IF YOU WOULD LIKE IT JUST LET ME KNOW.
