Recipe: Jack Rabbit Chili Con Carne (Jack Rabbit brand beans, 1960's)

JACK RABBIT CHILI CON CARNE

1 pound dry Jack Rabbit Pinto beans
4 cups water
3 Tablespoons bacon fat
1/2 cup chopped onion
2 pounds ground beef
1 quart tomatoes
1 scant teaspoon chili powder

Sort and wash beans. Boil washed beans in 4 cups water for 2 minutes.
Cover and let stand 1 hour. Bring to boil and simmer, covered, for 1 hour or until beans are tender.

Heat bacon fat in skillet and in it brown about onion. Add ground beef, brown and cook slowly for several minutes.

Combine the beef mixture in the large kettle of beans with tomatoes, add chili powder, heat to boiling. Serve in soup dishes.
