Recipe: Whole Wheat Banana Waffles (blender)

"High in protein, these crispy waffles have a nice texture and pleasant flavor."
DRY INGREDIENTS:
3⁄4 cup whole wheat flour
3⁄4 cup unbleached flour
1⁄2 cup old-fashioned oats
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon light brown sugar
1⁄2 teaspoon salt
WET INGREDIENTS:
2 eggs, lightly beaten
1 cup lowfat milk
1 teaspoon vanilla extract
1⁄2 cup unsalted butter, melted
1 (6 ounce) container lowfat vanilla yogurt
ADDITIONS:
1 banana, cut into 1 inch pieces
1⁄2 cup pecans or walnuts, finely chopped (optional)
Place whole wheat flour, unbleached flour, oats, baking soda and powder, brown sugar and salt in mixing bowl and stir to combine; set aside.
Place eggs, milk, vanilla, melted butter, and yogurt into blender jar. Cover blender jar. Holding cover in place, turn to medium and blend until ingredients are homogenous, about 15 seconds. Add banana and nuts if using and pulse on low about 10 times.
Whisk wet ingredients into the dry ingredients. Cook waffles according to manufacturer's instructions.
Makes 9-10 waffles
