My DH is an avid deer hunter - sometimes that's good. Anyway, here are 2 recipes that I have in my file. DH has been the one to do this each and every time - I know he's used the 1st recipe and it was very good - I'm not sure about the 2nd... These work well for beef of course - DH did turkey once too!

Oven Dried Jerky

1 1/2 to 2 lbs meat (usually round steaks are best)
Slice meat cross-wise into thin strips - easiest when the meat is partially frozen.
Mix the following together:
1/4 cup soy sauce
1 Tbsp Worchestershire sauce
1/4 tsp. EACH pepper and garlic powder
1/2 tsp onion powder
1 tsp hickory smoke flavored salt (liquid smoke works too)
Stir until dissolved - add meat strips and mix until well coated - cover and let stand 1 hour or refrigerate overnight.

Now here's the fun part... hold the meat strips lengthwise & poke a toothpick about 1/4 inch or so from the top and hang the strips from the oven racks (please put a cookie sheet or something on the lowest rack - makes an awful mess! DH learned the hard way and I made him clean the oven!)

Dry at 150 to 200 degree oven 6 - 7 hours. Store in refrigerator.


Texas-Style Jerky

The same as above except the marinade is as follows -

7 tsp salt
2 tsp EACH pepper, chili powder, garlic powder & onion powder
1/2 tsp cayenne pepper (or to taste)
6 dashes liquid smoke
1 cup water

You could lay the meat on cake cooling racks set on cookie sheets. (THis just occurred to me - I'm not known for doing things the easy way...)
