Recipe: Broccoli-Tarragon Bisque (blender or food processor)

BROCCOLI-TARRAGON BISQUE

1 bunch broccoli
2 large branches fresh tarragon (or 1 tsp. dried)
4 cups chicken broth

With a small, sharp knife, cut ends off the broccoli stalks and peel the stalks. Cut the stalks and florets into thin slices.

Combine ingredients in large heavy saucepan. Cook over medium heat until broccoli is tender, about 15 minutes.

With slotted spoon, transfer broccoli to a food processor or blender. Puree as smooth as possible.

Mix in remaining liquid. Season to taste with salt and pepper. Serve hot.

Makes 4 servings
