Recipe: Brocoli-Cheese Soup

Brocoli-Cheese Soup

10 ounce package frozen brocoli
1 cup thinly sliced carrots
1 cup finely chopped celery
3 1/2 cups chicken broth
3 tablespoons butter
1/2 cup chopped onion
2 tablespoons finely chopped parsley
1 teaspoon garlic powder
1/4 cup flour
3 cups milk
1 1/2 cups grated American cheese
1/2 cup sour cream
1/2 teaspoons Tabasco sauce
salt and pepper to taste

Steam brocoli, carrots and celery until tender. Puree in blender with 1 1/2 cups chicken broth. Pour into a large pan and add rest of chicken broth. melt butter in medium skillet, add onion and parsley and saute until onion is transparent. Add garlic powder and flour and cook over medium heat for 3 minutes. Add milk gradually, stirring until smooth. combine with vegetables and broth in pan and cook over low heat for 30 minutes. Stir in cheese, sour cream and Tabasco. Salt and pepper as needed.
