Recipe(tried): Broccoli/cheese soups..

Joe--following you will find my recipe and that of my 15 yr. old nieces. They are both very good.

BROCCOLI AND CHEESE SOUP

Serv Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 quarts enriched chicken broth
3 cups broccoli florets
1/2 pound American or any easily melted cheese-- cubed
1 cup 1/2 and 1/2 cream


Bring broth to a boil.

Add broccoli and cook for about 4 minutes.
Lower heat to simmer add cheese stiring until melted. Add cream.

ENRICHED CHICKEN BROTH

1 chicken
1 large onion -- chopped
1 cup celery -- chopped
1/4 cup parsley
2 carrots -- quartered
salt
pepper
creole seasoning
2 cups dry white wine

Place all ingredients in large stock pot.
Add water to fill pot.
Boil until chicken is falling off the bone.
For enriched stock remove all meat and bones and puree vegetables with stock.

RACHAEL AND REBEKAH'S BROCCOLI/CHEESE SOUP
Broccoli---1 big bag - chopped
a little Cajun seasoning
Velveeta cheese---1 lb.
1 can cream of chicken soup
1 can cream of mushroom soup
Pet Milk- enough to thin the soup some

Put in crock pot until cheese is melted and soup is hot. EAT!!!
