Recipe: Brownies Deluxe with Amaretto Caramel Sauce (using brownie mix)

1 (15 ounce) package Pillsbury Deluxe Fudge Brownie Mix
1/4 cup oil
2 tablespoons very hot tap water
2 eggs
1/2 cup chocolate chips
FOR SERVING:
Vanilla ice cream
Amaretto Caramel Sauce (recipe follows)
1/2 cup pecan halves, toasted*
Heat oven to 350 degrees F. Grease bottom only of a 9-inch square pan.
In large bowl, combine brownie mix, oil, hot water and eggs; beat 50 strokes with spoon. Stir in chocolate chips. Spread in prepared pan.
Bake at 350 degrees F for 30-35 minutes. DO NOT OVERBAKE. Cool completely.
Cut brownies into 3-inch squares. Place 6 of the brownies on individual serving dishes. Top each with scoop of ice cream, caramel sauce and toasted pecans.
*TO TOAST PECANS:
Spread on cookie sheet. Bake at 375 for 5 to 10 minutes or until golden brown, stirring occasionally. Or, spread in thin layer in microwave-safe pan. Microwave on HIGH for 3 to 4 minutes or until light golden brown, stirring frequently.
High Altitude--above 3500 feet: Add 1 tablespoon flour to dry brownie mix.
AMARETTO CARAMEL SAUCE
Makes 2 1/2 cups
1 cup brown sugar, firmly packed
1 cup heavy (whipping) cream
1/4 cup light corn syrup
2 tablespoons butter or margarine
2 tablespoons amaretto
In medium saucepan, combine all ingredients except amaretto. Bring to a boil, stirring occasionally. Reduce heat; boil gently 8 to 10 minutes or until slightly thickened. Remove from heat; stir in amaretto. Serve warm.
