Appetizers and SnacksAn item that is a hit with my friends and family is Bruschetta. This recipe is close to what I use: Bruschetta with Tomato, Basil, and Mozzarella Relish. I mix parmesan cheese in mine and do not use mozzarella cheese at all. In fact, I
chop Roma tomatoes fine (seed them), add minced garlic, a litte salt, black pepper, parsley flakes, parmesan cheese, olive oil, and just before serving add basil leaves. I don't have measures, I do this by taste.
