ORANGE-MINTED PEAS
2 cups shelled peas
1/4 cup sliced green onions
1 tablespoon chopped fresh mint leaves
1 teaspoon butter
1/2 teaspoon orange zest
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
Cook the fresh peas, covered, in boiling water for 3 to 5 minutes or until crisp-tender. Drain.
Stir in the green onions, mint, butter, orange zest, salt, garlic powder and pepper. Heat through.
Makes 4 side-dish servings
