Recipe(tried): Butterbean Soup with Watercress

Good morning,
Its a lovely sunny day here,hopefully I,ll get sometime in the garden to put in
some winter flowering bulbs,mind you last year the dogs dug alot of them
up!!!!!!so we,ll see.Sarah had a few of her pony club friends for supper last
night and I served this very quick and easy soup,thought you might like the rec.
also I,ll post the butternut side dish I served for you.

BITTERBEAN SOUP with WATERCRESS

olive oil
1 onion chopped
2 large leeks,washed and sliced
2 medium potatoes,diced
2 medium tins butterbeans,drained
2 good sized bunches watercress,washed and chopped(about 4 cups packed wt)
4 cups veggie stock
salt and feshly ground pepper to taste
thin cream to serve

saute onion and leeks in a heated oil til soft,about 5 mins,add potatoe.Add
watercress and stir til wilted,about 3 mins.add stock and beans and reuce heat
and simmer for 20 mins.Puree soup,season and reheat gently.Serve with a swirl
of cream and a sprinkle of paprika.

I doubled the ingredients to serve 8
