Try using Butternut squash to top casseroles!
Quick how-to:
Cut squash in half, and hunk it into easy to manage hunks. Cut off or peel the skin off. Cube squash into 1-2 inch peices.
Toss into a microwave safe dish, add 1/2 cup water then cover tightly with plastic wrap. Nuke it for 15 minutes.
Drain the water and add some butter, salt and any other seasonings (be creative). Mash it up and put it into a large ziploc bag.
Nip off a corner and pipe it out onto you casserole before baking.
Bake as you normally would for your casserloe.
