Recipe: Butterscotch Refrigerator Cookies (1940's)

BUTTERSCOTCH REFRIGERATOR COOKIES

2 cups sifted cake flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg, slightly beaten
1 teaspoon vanilla
2/3 cup chopped nut meats

Sift flour, baking powder and salt together.

Cream butter with sugars until fluffy. Add egg and vanilla. Mix well and add sifted dry ingredients and nut meats; mix.

Shape into rolls about 2 inches in diameter, wrap in waxed paper and chill thoroughly.

WHEN READY TO BAKE:
Cut into 1/8-inch slices and place on buttered baking sheet.

Bake in hot oven (400 degrees F) 12 minutes or until browned.

Makes 3 1/2 dozen cookies
