Recipe(tried): Cabbage and Kielbasa Soup
SoupsHi Lisa: A quick hint about Kielbasa, it is basically nothing more than 'smoked sausage' that has garlic in it, so you could use it in any recipe calling for smoked sausage or vice-versa, it also works quite well in many other recipes calling for ham or other smoked meat - example your favorite scalloped potatoes recipe with Kielbasa, boiled dinner with Kielbasa, a mess of beans with Kielbasa, eggs and fried Kielbasa, etc, etc.
Here is one for a hearty soup that we like quite well.
CABBAGE AND KIELBASA SOUP
1 lb kielbasa (cut into 1 1/2-inch pieces)
1 medium head cabbage, coarsely shredded or chopped
1 medium onion, coarsely chopped
1 medium carrot, sliced thin
2 cans (10 oz each) concentrated chicken broth
1 quart water (or 3 soup cans full)
2 cubes chicken bouillon
2 cubes beef bouillon
1/4 tsp ground nutmeg
1/4 tsp paprika
1/4 tsp whole caraway seeds
Salt and pepper to taste(Easy on the salt!! There is quite a bit in the Kielbasa!)
In your favorite large soup pot, brown the Kielbasa sausage. Drain and aside until later.
Discard the grease, reserving 2 tablespoons of the drippings in the pan. Add the cabbage and onion to the drippings in the pot. Stir and cook over medium heat until slightly browned and the cabbage is wilted, about 7 minutes.
Stir in all remaining ingredients except the sausage. Cover and simmer for 30 minutes, stirring occasionally.
Stir in the sausage and continue simmering for another 30 minutes or until vegetables are tender.
Adjust seasonings and add water, as and if needed.
