Recipe: Lentil and Canadian Bacon Soup (crock pot)

LENTIL AND CANADIAN BACON SOUP

4 cups water
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 cups vegetable broth
1 cup carrots (cut into 1/2-inch pieces)
1 cup potatoes (cut into 1/2-inch pieces)
1/2 cup finely chopped onion
1/2 cup celery (cut into 1/2-inch pieces)
2 1/4 cups dried lentils, sorted and rinsed
6 ounces Canadian bacon, coarsely chopped*

Mix all ingredients in 3 1/2 to 4 quart Crock-Pot slow cooker.

Cover and cook on LOW heat setting 8 to 9 hours or until lentils are tender. Stir well before serving.

*or 1 1/2 cups leftover ham.

Makes 8 servings
