Recipe: Canyon Ranch Chocolate Chip Cookies (using yogurt and applesauce)

1/4 cup butter
1/2 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1/3 cup non-fat plain yogurt
1/3 cup unsweetened applesauce
1 1/2 teaspoons vanilla extract
2 cups plus
2 tablespoons all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (6 ounce) package miniature semi-sweet chocolate morsels
In a large bowl, cream butter with granulated sugar and brown sugar. Add egg and mix well. Add yogurt, applesauce and vanilla. Mix well and set aside.
In a medium bowl, combine flour, baking soda and salt. Add to creamed mixture and stir to blend. Add chocolate morsels. Refrigerate dough until chilled (for crispier cookies, freeze dough for at least 2 hours before baking).
WHEN READY TO BAKE:
Preheat oven to 350 degrees F. Lightly spray cookie sheets with non-stick vegetable spray.
Measure 1 level tablespoon of dough per cookie and place 2 inches apart on cookie sheet.
Bake cookies in 350 degree F oven 8-10 minutes or until cookies begin to turn golden on the edges. Let cool before removing from pan.
Makes 42 cookies
