Recipe: Caramelized Sweet Onion Gravy

Now, I haven't tried this yet but I certainly intend to. The recipe comes from a lovely area restaurant and I felt (with the holidays coming up) that I should share it. I think it would make a nice alternative if you did not have the necessary drippings to make traditional gravy.

CARAMELIZED SWEET ONION GRAVY
(Serve with your favorite roast turkey or pheasant recipe)

1/4 cup butter, unsalted
4 large onions, sliced thin
1 1/2 Tbsp. fresh rosemary, chopped
1 1/2 Tbsp. fresh thyme, chopped
1 1/2 Tbsp. fresh parsley, chopped
1/2 Tbsp. fresh sage, chopped
1 Tbsp. fresh lavender, chopped
1 1/2 Tbsp. all-purpose flour
1/2 cup balsamic vinegar
3 Tbsp. honey

Melt butter in a large pot. Add the onion and saute until deep brown, about 25 minutes. Add rosemary, thyme and flour. Stir until fully incorporated. Add vinegar and honey. Simmer until thickened about 15 minutes. (Can be made 1 day ahead; cover and refrigerate.) Serves 10-14
Note: the recipe does not mention when to add the parsley, sage, and lavender but I assume that it would be with the other herbs.
