Recipe(tried): Carol's Picadillo, Yellow Rice and Sweet Plantains Tonight!

Tonight for dinner we will be enjoying Picadillo, Yellow Rice and Fried Sweet Plantains. One of my DH's favorite meals. I had gone by the fresh fruit market on S.R. 60 yesterday and they were selling 7 for $1.00. They are so ripe and dark...I took a whiff of one and smelled the sweetness and thought, "these will be great with rice and picadillo"! Mom came over today to go over recipes, and make up the menu for next week. I have my coupons cut out and my grocery list made out for shopping tomorrow. I can't wait! I love going grocery shopping!!

I finally cleaned the shingles of the roof on Sunday and almost scared my DH out of his socks!! HeeHeeHee, I can still laugh at the memory. I was on top of the roof, spraying with the shingles cleaner and using the use then brushing the mildew off, when I sort of slipped a little and he thought I was going to slide on down the roof. I told him I was ok, and he insisted I come off that second. I talked him into letting me finish off the job since I was already up there and that I had slipped because I stepped on the wet area. Reluctantly, he agreed but I had to do it fast as he was grumbling and saying things...at least it is done for the upcoming holidays!

I don't think I will do that again, though, it is a hard job and the muscles in legs hurt. Next time, I guess we will have to pay a man to go up and clean them. They got dirty because of the overhanging limbs of the oak trees. Those limbs are long gone...the trees were all trimmed this summer.

Here is the recipe which I am sure I have posted before, it is a keeper!! I always make sure to make extra so that I can make stuffed potato balls (Papas Rellenas).


MY NEIGHBOR CAROL'S PICADILLO
Servings: 6

2 onions, diced
2 red bell peppers, diced
1 tsp. pressed garlic
4 Tbsp. olive oil, divided use
1 1/2 lbs. lean ground beef

1 (12 oz.) can of tomato sauce
1 medium jar stuffed olives, sliced
1 small jar capers
1 small box (about 1/2 cup) dark raisins

2 Tbsp. Worcestershire sauce
1/2 the juice from the olive jar
1/2 tsp. salt
1/4 tsp. oregano
1/4 tsp. black pepper
1/2 tsp. celery salt
1/4 tsp. paprika

Saute the onions, peppers and garlic in 2 Tbsp. olive oil until softened. Set aside.

Saute beef in 2 Tbsp. olive oil.

Combine the sauteed veggies and beef in one large skillet pan. Add tomato sauce, olives, capers, raisins, and remaining seasonings. Stir well to mix. Cook covered 40 minutes on low heat.

Serve with Vigo Yellow Rice or plain white rice.
