Recipe: Strawberry Salad (layered, using Jello, pineapple, pecans and sour cream)

STRAWBERRY SALAD

2 packages (3-ounces each) strawberry-flavored gelatin
1 1/2 cups boiling water
2 cups strawberries, sliced
1 (15 1/4-ounce) can pineapple tidbits in juice, drained
1/4 cup chopped pecans
1 cup low-fat sour cream
Cooking spray
Curly leaf lettuce leaves

Combine gelatin and boiling water in a bowl; stir until gelatin dissolves. Add strawberries; chill 30 minutes or until partially set.

Add pineapple and pecans; stir well. Spread half of gelatin mixture evenly into an 8-inch square pan coated with cooking spray; chill slightly.

Stir sour cream into remaining gelatin mixture; spread evenly into pan. Chill 20 minutes or until set.

Cut into squares, and serve on lettuce leaves.

Makes 9 servings
