I thought that was called a "Carolyn Salad"...must be one of those regional specialties.
eg: last night's Carolyn salad contained:
salad mix (the greens, oh my gosh, how did I ever live without them all those years?)
diced cucumber
diced fresh local peaches
walnuts
pumpkin seeds
dried cranberries
pomegranate vinagrette
I got that salad together lickety-split while the chicken suisse baked up in the oven. Sooo easy and delicious!
And so went my 20 minute meal after a day of errands (and yes, the salad mix is cheaper by the tub; mine came from Costco for under $4); more locally, I pay $5 for the tub, but like you, we go thru it at a brisk pace...those bags just don't make the grade!
Gina, I hope you have a wonderful day!
Carolyn!
(for lunch, a Gina&/or Carolyn salad is wonderful with any kind(s) of fruit and some feta cheese. And if you're at home, you can toast the nuts, even better!)
I keep nuts in big containers on the door of my deep freeze:
the kids (big and small) know these are my nuts for cooking, and are thus off-limits to snacking! I have pecans, cashews, hazelnuts (filberts), walnuts, and almonds. Yesterday, I picked up some pumpkin seeds (a lb) to add to my freezer-door collection.
You can toast them, or just use them right from the freezer.
I don't bake much anymore, so mostly they are used in cooking and salads.
