Great to hear you make a similar yummy tasting salad! I also keep all my nuts in the freezer, I think I read somewhere that they don't go rancid on you that way. I buy a HUGE bag at Costco and then I fill a quart baggy with them that I keep in the fridge for salads and baking.
DH cannot eat any pecans or peanuts due to kidney stones so I have switched to walnuts and almonds. I must look for cashew or almond butter in a health food store so that I can make his PBJ or rather CBJ or ABJ sandwiches for lunch on certain days. I don't want him to get bored with turkey sandwiches. Although he loves how I make those too:
From Sam's Hickory Smoked Perdue Turkey Slices
2 pieces of whole wheat bread
honey mustard
4 thin slices of Roma tomato
spring greens
4 thin slices of cucumbers or 4 slivers of sweet red bell pepper
1 slice of provolone cheese
or you can wrap the above in a sundried tomato wrap.
How did your garage sale go? Did you get rid of everything? I need to have one soon. Maybe when it cools off a bit here...
