Carrot-Raisin Salad
A long time favorite
Makes 6 servings (1/2 cup) each

6 medium-size carrots
1 cup raisins
1/4 cup mayonnaise or salad dressing
Lemon juice if you desire

Finely chop or shred carrots. Mix all ingredients well.
