Judy/AZ (07:03:33) : Chicken Noodle Casserole

1/2 c plus 2 T butter, divided
1/2 c all-purpose flour
3 c rich chicken stock
2 c sour cream
1/2 c white wine
dash nutmeg
salt and freshly ground black pepper, to taste
1 lb egg noodles, cooked 6 to 7 minutes
4 1/2 c cooked chicken, cut into pieces
1 lb mushroom, sliced and cooked
1 c soft bread crumbs
1/2 c Parmesan cheese, freshly grated

Preheat oven to 350 degrees F.

Clean and slice the mushrooms and saut in a 2 tablespoons butter until soft and slightly browned, about 7
minutes.

Remove crusts from 2 or 3 slices of fresh bread and with steel blade in food processor, process bread until soft
crumbs form.

Melt 1/2 cup butter in a saucepan, over medium heat, and whisk in the flour. Cook 1 minute. Gradually add
stock, sour cream and wine. Cook until thickened, stirring constantly. Add nutmeg, salt and pepper to taste and
blend well. Arrange the noodles in an ovenproof casserole. Layer chicken, mushrooms then sauce to cover.

Melt remaining 2 tablespoons butter and mix with the bread crumbs. Top the casserole with the buttered crumbs
and sprinkle with Parmesan. Bake for 30 minutes, or until heated through and bubbly.

Serve with buttered green beans and biscuits

Tortilla Casserole

1 lb ground beef or turkey
1 med onion chopped
1 jar (8oz) green salsa/taco sauce
1/2 cup sour cream
1 can cream of chicken soup
1- 4oz can diced green chiles
6 corn tortillas cut in strips
2 cups shredded cheddar cheese
Cook and drain beef and onion

Spread 1/2 cup salsa in bottom of ungreased baking
dish 8x8x2.

Mix remaining salsa, sour cream, soup and chilies in a
bowl. Layer 1/2 of tortilla strips, beef, soup mixture and cheese, repeat.

Bake uncovered 350 for 30-40 minutes 6 servings
You can make it less fat with low fat cheese and sour cream!

Scalloped Chicken

1-5 lb. chicken cooked, boned and cut into pieces
1/2 cup margarine
3/4 cup flour

Blend and add 1 1/2 qts. chicken broth and add 4
beaten eggs.

Add:
2 tablespoons onion
1 teaspoon salt
1 tablespoon sage
1/8 teaspoon pepper

Butter casserole dish and add 6-8 cups bread cut into pieces. Pour sauce over and bake at 350 degrees for 45 minutes.

Quick and Easy Turkey Casserole
Serving Size: 6

1/2 tsp olive oil
2 c ground turkey breast -- cooked
1/2 c onions -- chopped
1/2 c bell peppers -- chopped
3 c frozen corn -- thawed
4 c Hash Brown Potatoes
3/4 c skim milk
1/2 tsp salt
1/4 tsp black pepper
1/2 c fat-free cheddar cheese -- grated

Preheat oven to 375. Prepare a 2-quart casserole dish with cooking spray; set aside. In a skillet,
heat oil over medium heat. Add turkey, onions, and bell peppers. Cook until turkey is longer pink
and vegetables are tender.

Stir in corn, hash brown potatoes, milk, salt, and black pepper. Bake, covered, for 30 minutes or
until heated through. Top with cheddar cheese.

Bake for 3 minutes more or until cheese has melted.

BAKED ITALIAN SPAGHETTI

1 lb Hamburger
1 Box elbow spaghetti
1 c Kraft Colby cheese, grated
1 small Can tomatoes, drain and dice
1 can Tomato sauce
Garlic salt, pepper to taste

Cook spaghetti until done, then mix with other
ingredients. Do not fry the hamburger. Add a little of the juice from the tomatoes to make slightly moist.

Mix some butter with cracker crumbs and pour over the top. Bake 30 minutes after it has started to cook.

CHICKEN/ TURKEY MEATBALLS with TOMATO, PINEAPLE, SOY SAUCE
from Calliope

-1 can (20 oz.) pineapple chunks in their own juice, not syrup
-1-TBSP cornstarch
-2 cups tomato juice
-1/3-cup white wine, rice or malt vinegar, or more to taste
-2-TBSP.s brown sugar, more if you like it sweeter
1-tsp. dry mustard
2-Tbsp.s soy sauce, or more to taste
celery seed, cloves, thyme, black pepper...and cayenne if you wish
*optional...chopped fresh cilantro

-About 2 lb. ground chicken or turkey
-1- cup grated onion
1/2-cup ketchup
1-large onion chopped
-1 small green pepper, cut in thin slices
-1-1/2 cup dry bread or cracker crumbs
-1 can water chestnuts, minced
-1 or 2 eggs beaten
-2 Tbsp. or more, Soy or Worcestershire sauce or use both
-1/3 cup finely chopped parsley and/or cilantro, try some mint too!
-3 large garlic cloves, pressed
-black pepper, to taste
1/2 tsp. either celery salt or seed
-1 tsp. dried thyme
-2-3 dashes cloves or allspice
1-tsp. ground coriander
*optional...1/2-cup or more, currants

Drain pineapple, saving juice. Mix juice with, cornstarch, 2 cups tomato juice and set aside. Mix;...chicken, onion, garlic, water chestnuts, soy and/or Worcestershire sauce, bread or cracker crumbs, egg(s) parsley or cilantro, thyme, clove or allspice, coriander, celery salt and ketchup and I like to add some olive oil too since the chicken so lean and all...can be dry..... together well and shape, with damp hands, into large meatballs.
In a large skillet, saute, with the green pepper slices and onions for 2-3 min.
At the end, add some chopped scallions if you wish.
To this, add the sauce you have made in the following way;.....
Bring the liquid and spices mixture to a boil, stirring constantly. Add pineapple chunks, heat through. Pour over meatballs and simmer gently 3-5 min. or until chicken is cooked all the way through.

Serve over white rice or couscous. Serve a side of steamed carrots with lemon butter and mint.

Sprinkle with fresh lemon juice when you serve it!

Try serving with cucumbers in yogurt and mangos or mango ice cream for dessert.

Emeril's Creamy Cajun Chicken with Cheesy Rice...
(with CALLIOPE'S adjustments)
...and a very pretty and tasty juice drink I came up with, at the bottom.

olive oil
4-6 chicken breast halves, skinless, boneless
Once marinated and cooked, cut into 1 in. cubes
Or you could cube it, raw....I use chicken tenders!
At least 2-tsp.s Cajun Essence (mixed spices)
1 in marinade and 1 when cooked. 2- cups chopped onions...red and yellow
2- yellow peppers, in long thin slices
2-red peppers, in long thin slices
3-4 jalapenos with seeds and ribs to taste for heat.
*optional.....1 pound smoked turkey sausage, chopped
...Might want to just increase chicken amount
instead, thus the 4-6 amount listed above....
and add liquid hickory smoke
salt
freshly ground black pepper
4-large garlic cloves mashed to a paste with salt
jalapeno or red pepper flakes...according to taste
1-Tbsp. fresh oregano, less if using dry
1- cup heavy cream
1-2 Tbsp. of Worcestershire Sauce
1-Tbsp. Poupon or Nance's Sharp & Creamy mustard
*optional..... 1-2 Tbsp. Hot Sauce of your choice
1/2 cup chopped green onions
1/4-cup chopped fresh flat-leaf parsley
*add 1/2 cup grated Parmesan Reggiano cheese at the end

Accompaniment...White rice made with red pepper flakes, dash celery salt, a little turmeric, chopped garlic and finished with grated sharp cheddar cheese..or cheese of choice.

Make a marinade of;...half cup of olive oil, Worcestershire sauce, 1-tsp Cajun spices, the mustard and a paste of the fresh oregano, coarse salt and the chopped garlic, ground together with a mortar and pestle. Marinate chicken overnight.
Next day, remove chicken from marinade, wiping off excess marinade and saute till done, about 4 minutes. Remove to a glass baking dish. Add reserved marinade to the skillet and saute the onions till just tender and add to the chicken. Next saute the peppers also till just tender and add them. Last, quarter the smoked turkey sausage length-wise and then slice into chunks. Saute a few minutes in a bit more olive oil then add the cream and simmer till it thickens a bit. Mix it all together and add the second tsp. of Cajun spices the parsley and the chopped scallions, fresh black pepper, parmesan if you are using it, and adjust the seasoning further to your taste. Serve the rice next to it.
Beastly loves this!...and it tastes best the next day of course!

*NOTE...Try serving this with applesauce made with part cranberry sauce and a slice of zucchini bread spread with cream cheese. You might also like to serve this with lemon, buttered carrots or sliced yellow squash pan fried/grilled and dressed with olive oil, lemon juice, oregano and parsley.

ALSO...rather than the rice, you might want to serve it with rosemary roasted potatoes with the skin on.

JUICE DRINK

Make orange juice ice cubes. Put them in a glass and pour over a half and half blend of cran-raspberry juice and club soda. Put a lime wheel on the rim of the glass. You could use champagne or vodka in place of the club soda if you like.

CALLIOPE'S PROPER PURPLE POLISH SUPPER

2-bags (1-pound) sauerkraut, rinsed and drained
2-large yellow onions, rough chopped
1-2-cups fennel (anise) bulb, rough chopped
3-4 apples of choice, rough chopped
4-or more medium beets.........
roasted, whole in foil with some salt, pepper, whole garlic cloves,unpeeled,
thyme and a couple dashes of cloves...at 350 for 45 min.s-1-hour.
Cool, peel. slice in half then 1/4" slices...save juice to use! Squeeze the garlic from their skins and add as well.
1-or more, packages of turkey "Kielbasa", or regular, if you prefer,
angle sliced, 1/4" thick.
1-tsp.bruised caraway seed
1-mini-bottle white wine, (about 2 cups, I think)
*** you might want to try substituting beer for the wine,
though I haven't tried that yet! ***
Salt and black pepper.....chopped fresh parsley, and even some dill, if you wish. You also might want to pass around a bowl of sour cream.

Combine everything in a large glass "lasagna" sized baking dish.
Cover with foil and bake at 350 for 1/2 hour to 45 minutes.

Serve this with potatoes of your choice or some nice rye or pumpernickel bread, toasted and spread with a cream cheese, scallion, dill mixture.

CALLIOPE'S SPINACH AND BROWN RICE CASSEROLE

4-cups of cooked brown rice
*1-cup of this can be wild rice....yum!*
1-large yellow, or red onion, rough chopped
1-sweet red pepper, rough chopped
4-garlic cloves, minced
2 boxes frozen chopped spinach, defrosted and drained well
or use Swiss chard
1/2-cup chopped Italian parsley
2-cups grated Asiago cheese.....you may use cheese of your choice
6-large eggs
1-1/2-cups milk
2-3 Tbsp. soy sauce
1/2-Tbsp. Cajun Essence or if you don't have it,
a mixture of oregano, cayenne, thyme and paprika
salt, pepper and nutmeg, to taste

*** optional additions......
chopped black olives, mashed extra firm or seasoned, baked tofu, canned artichoke hearts, sliced into quarters, sunflower seeds or some chopped nuts of your choice.

Prepare the rice and set aside.
Saute the onion, garlic and red pepper in oil of your choice, or butter.
Add the spinach and warm to get rid of more of the water. Add all the seasonings and remove from the heat. Add the rice and any of the optional ingredients you may want to use, and blend thoroughly.
Beat the eggs with the milk. Stir the cheese in by hand and add to the rest of the mixture. Pour into a buttered baking dish of the size into which it will fit, but not be too thin of a layer. Cover and bake at 350 for 35 minutes or until the eggs are just set.

I served this recently with a cold 4-Bean Salad and it made a very complete and I think, pretty healthy, meal. And always...fruit for dessert!

NOTE.......you may use Swiss chard if you prefer!

Easy Broccoli and Cheese Casserole
This is an old standard around my house that is relatively fast and simple and is a favorite of all our guests.
We usually include it in all the major holiday meals.

one box uncle ben's brown and wild rice.
one can condensed mushroom soup
2 cups broccoli, cut into bite size pieces
shredded cheddar cheese

Cook the rice with seasonings as directed to by the instructions on the box (or bag).
Steam broccoli until cooked, but still firm.
Combine rice, broccoli and canned soup (do not added extra water)and place in a deep casserole dish. Season with Salt and Pepper if you desire.
Cover with cheddar cheese . Place the dish with a lid, tin foil, etc. in an oven preheated to 325 C. Cook until heated thoroughly, about 15 minutes. Remove cover and let the cheese melt completely.
