Recipe(tried): Cherry Nougat Cookies (like Archway) These turned out very much like what I remember
Desserts - Cookies, Brownies, BarsThese were very similar to what I remember. I colored them pink, and I think the cherry flavoring is essential to making them like the Archway recipe. One bite instantly took me back =)
CHERRY NOUGAT COOKIES
3/4 cup butter or margarine, softened
1/3 white granulated sugar
1/4 tsp cherry flavoring
2 1/2 cups all-purpose flour
red food coloring (otherwise they turn out brown from the nuts)
1 cup very finely chopped pecans (small like rice grains)
1/2 cup tiny cherry chips (I took full sized chips and whizzed them in the cuisinart for a few seconds)
1/3 cup confectioners sugar
Preheat oven to 325 degrees F.
Using electric mixer, blend butter or margarine, granulated sugar and cherry flavoring for 3 to 4 minutes until creamy and fluffy.
Stir in flour, food coloring, pecans and cherry chips just until blended. Roll into 1-inch balls. Place 1 inch apart on ungreased baking sheet.
Bake for 20 minutes or until lightly browned around edges. Cool on wire rack - cool completely as they are very fragile while warm and will break up if handled.
Roll in confectioners sugar.
