Chicken Florentine
2 packages (10 oz. each) frozen chopped spinach, thawed and drained
1 1/2 cups dry Minute Rice
1 (10 3/4 oz.) can Campbell's Condensed Cream of Chicken Soup
1/4 teaspoon ground black pepper, divided use
6 boned chicken breast halves, cut into strips (1 1/2 pounds)
1/4 teaspoon garlic powder
1 cup grated Swiss cheese
Mix together spinach, rice, soup and 1/8 teaspoon of the pepper. Spread in greased 13x9-inch baking dish.
Layer chicken pieces on top of spinach. Season with garlic powder and remaining pepper. Sprinkle cheese over chicken.
Bake at 350 degrees F for 25 minutes or until hot and bubbly.
Makes 6 servings
