Recipe(tried): Chicken Noodle Soup (quantity recipe)

Our Rotary Club frequently has soup suppers and it is generally my job to make the soups. Although I don't have specific recipes, I'll be glad to share with you what I know.

CHICKEN NOODLE SOUP

1/2 stalk celery, thinly sliced
1 lb. baby carrots, thinly sliced
1 medium onion, finely chopped
1 c. butter or margarine
1 tsp. garlic powder

Saute the above ingredients together in a large heavy stockpot. When the celery and carrots are starting to get soft, add:

3 large cans (about 50 oz.) chicken broth

Bring this all to a boil and add:

1 lb. thin egg noodles (I make homemade)

Reduce heat and simmer until the noodles are done. Add:

chopped chunks of white/dark meat chicken

Mix together:
about 1/4 cup cornstarch
1 cup cold water

Stir this slowly into the hot soup and again bring to a boil. Season to taste with salt and pepper.
