So many chicken salad recipes- so little time to try them all!!! And they're all good!! Here's my recipe
FOR THE CHICKEN:
3 chicken breats (skinless and boneless-jus' cause it's easier)
1 teaspoon chicken boullion granules
liberal dash of black pepper
1 teaspoon kosher salt
1 teaspoon dried onion
water to cover in large saucepan.
Bring all ingredients to low boil and then turn down to simmer until chicken is done - about 20 minutes for medium sized breasts. Remove breasts from water and set aside to cool.
FOR THE DRESSING:
1 cup Hellmans Mayonnaise
1 teaspoon salt
1/4 teaspoon dried dill weed
a couple good cranks of coarse ground pepper
1/4 cup sugar
1/4 cup tarragon vinegar
Mix Mayo with salt, dried dill weed, pepper, sugar and and vinegar. Finger taste it to get it to your desired sweet- sour taste. Set aside.
ADDITIONAL INGREDIENTS:
Finely chop 2 ribs of celery
Medium chop 1/4 cup walnuts
raisins or halved grapes (optional)
crossaints (optional, for serving)
TO MAKE THE SALAD:
Chop chicken either by hand or food processor or meat grinder. Mix dressing, chicken, celery and nuts. May add raisins or halved grapes. May add a little more mayo if it's too dry.
Chill.
I like to serve this on crossaints.
