Recipe: Chicken Wing Pizza

Chicken Wing Pizza
This is my own creation and my family's FAVORITE. I don't measure any of the ingredients, but here's how it goes together.
Boneless chicken breast *, finely diced
Oil
1/2 bottle Red Hot Sauce (4.5 oz. bottle), plus more to sprinkle
Pizza crust **
bleu cheese salad dressing, bottled
Mozzarella cheese, shredded
Cheddar cheese, shredded
Parmesan cheese
Onion, finely diced
Diced celery
Brown diced chicken in a small amount of oil. When pieces are beginning to get brown, add approximately half of a 4 1/2 oz bottle of Red Hot Sauce (or more depending on how hot you like it) and simmer slowly until most of the sauce is absorbed.
Prepare a pizza crust (**I use one made with whole wheat flour and honey).
Spread the crust with bottled blue cheese salad dressing (Wishbone brand seems to work best for this recipe). Sprinkle with a little more Red Hot Sauce. Spread the chicken pieces on top. Top with a combination of shredded mozzarella and cheddar cheeses. Sprinkle with a little Parmesan cheese and finely diced onion.
Bake at 450 until crust is browned and cheese is bubbly. Top with finely diced celery.
