Recipe: Chicken with Orzo (using onion, tomato sauce and cinnamon)

CHICKEN WITH ORZO

"This is not only excellent but also very simple to make."

1 frying chicken, cut in pieces
1 medium onion, sliced
1 or 2 cloves garlic, minced
1 (12 oz) can tomato sauce
2 tbsp olive oil
2 tbsp tomato paste
1/2 tsp ground cinnamon
Fresh oregano, to taste
Salt and pepper to taste
FOR SERVING:
2 cups cooked orzo (1/2 cup/person)

Brown chicken in olive oil and remove from pan.

Add onions and garlic to pan and saute until translucent.

Add tomato paste and mix well. Add tomato sauce, cinnamon and oregano; mix well. Add the browned chicken with its juices. Cover and reduce heat and simmer until chicken is done about 30 to 40 minutes. Add salt and pepper to taste.

Serve 1 or 2 pieces chicken per person and spoon the sauce over the orzo.
