Recipe(tried): Chinese Lemon Chicken, Chinese Green Rice

Hi my name is Alicia and although I never post here, I read and lurk here daily. I have tried many of the wonderful recipes here and am so impressed with the love that goes into each and every one of them. What a joy cooking is and how much peace it can bring to ones life. Here in IL the trick or treaters were out and about DH and I have no children just cats, 3 to be exact so I decided to make a simple dinner of Chinese Lemon Chicken, Chinese green rice and some steamed carrots that I add a bit of ginger to. Topped off with some store bought fortune cookies it was good eats. Sorry if I am a bit wordy here, but kind of new to the posting thing. Happy Halloween.

Chinese Lemon Chicken
(from Best American Recipes 2000)

1 lb chicken boneless breast or thighs
1 tbs rice wine vinegar
1 tbs soy sauce
1 tbs honey
1 lemon
1 tbs veg oil
3 slices of ginger (thin)
1/2 tsp salt

In a med bowl combine the rice wine, soy sauce and honey.
Slice off 1/8 inch of lemon on both ends. Halve the lemon crosswise and then each half into four. You will have 8 wedges. Remove any visible seeds.

Heat one large skillet until hot not smoking. Add oil, lemon wedges and ginger and stirfry for 1-2 min, or until lemon and ginger are slightly browned. Transfer lemon and ginger to a small plate.

Add chicken to skillet fry 3-4 min, adjust heat as needed. Turn over chicken and fry another 3-4 min till browned. Sprinkle on the salt, the wine mix and the lemon and ginger. Cover and simmer another 3-4 min, then flip again till cooked through. Serve immediately.

Chinese Green Rice

I have a rice steamer so I cook the rice in that first, you can make what ever kind of rice you like, I then add about 5-6 green onions chopped to the rice. I usually have about 3 c. cooked that I add the green onion too. I add salt, pepper, and sometimes a bit of cilantro or mint if it happens to be around. I then take some lemon zest and throw that in along with about 2-3 tsp of sesame oil. I let the hot rice steam the green onions so they stay nice and bright. Really good served with stirfry too.
