CHOCOLATE CREAM DELIGHT
1 cup sifted cake flour
1 cup granulated sugar
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup soft shortening
2 squares (1 ounce each) unsweetened chocolate, melted
1/2 cup hot water
1/4 cup buttermilk
1/2 teaspoon vanilla extract
1 egg, unbeaten
1/2 cup chopped walnuts
FOR SERVING (optional):
1 cup heavy (whipping) cream
2 Tablespoons granulated sugar
1 (1 1/2 oz.) bar milk chocolate (for chocolate curl garnish, optional)
Grease bottom of a 9-inch deep-dish pie plate; then line with waxed paper.
Into large mixing bowl, sift together flour, sugar, salt and baking soda. Drop in shortening; pour in chocolate and hot water; with mixer at low speed, beat 2 minutes, scraping bowl and beaters frequently. Add buttermilk, vanilla and egg; beat at low speed for 1 minute. Stir in walnuts; turn into prepared pie plate.
Bake in preheated 350 degree F oven for 35 to 40 minutes or until cake tester, inserted in center, comes out clean. Cool in pie plate on wire rack about 10 minutes; remove from pie plate; cool completely.
TO SERVE:
Just before serving, whip cream until stiff, gradually adding the 2 Tablespoons sugar; frost cake with whipped cream. With vegetable parer, shave chocolate in curls over top of cake. Serve in wedges. Refrigerate leftovers.
