Recipe: Joan F.'s Pineapple Cake with Cream Cheese Icing (13x9-inch, 1970's)

JOAN F.'S PINEAPPLE CAKE

2 cups flour
2 tsp baking soda
1 (18 oz) can crushed pineapple and juice
2 cups sugar
2 eggs
1 tsp vanilla
1/2 cup chopped walnuts
Cream Cheese Icing (recipe follows)

Preheat oven to 350 degrees F. Grease and flour a 13x9-inch baking pan.

Combine flour and baking soda. Mix in undrained pineapple, sugar and eggs. Add vanilla and nuts. Place in prepared pan.

Bake in preheated oven for 45 minutes or until cake tests done. Cool in pan on rack.

Frost cooled cake with Cream Cheese Icing.

CREAM CHEESE ICING

1 (8 oz) pkg cream cheese, softened
1 3/4 cups powdered sugar
1/2 stick (1/4 cup) butter, softened
1 tsp vanilla
Dash of salt
1/2 cup chopped walnuts

Mix together powdered sugar, cream cheese, butter, vanilla and salt. Beat until fluffy. Stir in walnuts (or reserve walnuts and sprinkle on top of icing).

Makes 1 (13x9-inch) cake
