Recipe: Chocolate Zucchini Bread (using honey, chocolate chips and almonds)

CHOCOLATE ZUCCHINI BREAD

2 squares (1 oz each) unsweetened chocolate
1 cup Sue Bee Honey
1 cup sugar
3/4 cup vegetable oil
3 eggs
1 tsp vanilla
3 cups flour
1 1/2 tsp baking powder
1 1/4 tsp baking soda
1 tsp ground cinnamon
1 tsp salt
2 cups shredded zucchini
1 cup chocolate chips
1 cup chopped almonds

Preheat oven to 325 degrees F. Grease 2 (9x5-inch) loaf pans.

Melt chocolate squares and combine with honey, sugar, oil, eggs, and vanilla; mix well.

In a separate bowl, combine flour, baking powder, baking soda, cinnamon and salt. Stir into chocolate mixture just until mixed. Stir in zucchini, chocolate chips and almonds just until mixed. Pour batter into prepared pans.

Bake for 1 hour or until an inserted toothpick comes out clean.
