HONEY-ORANGE CHICKEN STIR-FRY
1 1/2 cups hot cooked rice (cooked as directed on package)
2 boneless skinless chicken breast halves (about 1/2 lb.), cut into thin strips
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup orange juice
1 tablespoon honey
1 1/2 teaspoons cornstarch
1/2 teaspoon grated orange peel
1 cup Green Giant Frozen Sweet Peas, thawed*
1/3 cup cashews
While rice is cooking, spray large nonstick skillet or wok with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken, salt and pepper; cook and stir 3 to 4 minutes or until chicken is no longer pink.
In small bowl, combine orange juice, honey, cornstarch and orange peel; blend well.
Add peas and orange juice mixture to chicken in skillet; cook and stir until mixture thickens and peas are hot.
Stir in cashews. Serve over rice.
*To quickly thaw frozen peas, place them in a colander or strainer; rinse them with warm water until thawed. Drain well.
