Recipe(tried): Christmas Eve at Our House - Baked Ham with Debbie's Orange, Pineapple, and Cherry Glaze, EASY Scalloped Potatoes (microwave), Mama's Favorite Punch
Holidays, Celebrations Our family comes to our house for Christmas Eve dinner. My sister makes the most wonderful dressing, just like my mama's, and the most delicious red velvet cake. So, of course, I asked her to bring these two specialties of hers. We also had: baked ham with Debbie's Orange, Pineapple, and Cherry Glaze, EASY Scalloped Potatoes, ambrosia with orange dip, Hobbs' Sweet Potato Casserole, green beans almondine, zipper cream peas, rolls, and sweet tea with lemon. For dessert, we had my sister's red velvet cake, Kristin's almond cookies, peanut blossoms, sand tarts, snickerdoodles, and Mama's Favorite Punch.
Debbie's Orange, Pineapple, and Cherry Glaze
1/2 cup fresh orange juice
1/2 cup pineapple juice
cherry juice from 1 10 oz. jar of cherries
3 T. brown sugar
2 T. cornstarch dissolved in 2 oz. cold orange juice
Put the juices in a microwave-safe bowl along with the brown sugar. Let heat and allow brown sugar to dissolve. Cook on 50 power for 5 minutes. Remove from microwave. Stir in cornstarch dissolved in cold orange juice. Return to microwave and cook on HIGH for 4 minutes. Remove the bowl and see if the sauce has thickened. If it has, put the sauce in a pretty crystal creamer (or any small pitcher) and pour over ham. If it hasn't thickened properly, continue to microwave on HIGH, checking the glaze every three minutes.
EASY Scalloped Potatoes
1 cup grated cheese
2 boxes cheesy scalloped potatoes
Prepare scalloped potatoes according to package directions--adding water, milk, and butter. Add the grated cheese and microwave on HIGH for 22 minutes or until potatoes are done.
Mama's Favorite Punch
1 half-gallon of lime sherbet
1 2-liter bottle of ginger ale--All of the ginger ale will NOT be used
Allow lime sherbet to soften in a punch bowl. Add ginger ale slowly while mixing with an electric mixer. Use just enough ginger ale to make the punch easy to pour. Punch is ready when all of the sherbet has mixed with the ginger ale and is able to be poured into punch cups.
Tomorrow we will have all of the above goodies with baked turkey and Mama's Dumplings.
