Recipe(tried): Christmas Stollen (Weihnachtstolle)

Here is a good stollen recipe I make at Xmas time and it makes quite a large one or you can make two small-medium ones if prefered.

Christmas Stollen

Ingredients

350g plain flour
5g salt
25g castor sugar
lemon peel (fresh)
1 egg
25g fresh yeast
1 1/4 dl milk
75g butter
150g currants
150g sultanas
25g angelica (optional)
25g orange peel

To make Almond Puree(marzipan)
100g peeled almonds
100g white sugar
1/2 egg
Grated lemon peel
Lemon Juice

Method to make almond puree
Grind almonds, mix with sugar, egg and the grated lemon peel and juice. Blend well. Out in airtight container and leave as long as poosible.

Method Dough
Make dough from the flour, salt, castor sugar, lemon peel, yeast, tepid milk (warm) and melted butter like for white bread. Let prove for approx 3/4 hour then mix in dry currants, sultanas, angelica(cutup) and orange peel. Roll out into a thick round piece. Place on a baking tray the almond mixture in the middle. Fold dough over so that the top part is smaller than the bottom part. Glaze dough slightly with butter. Prove again for 3/4 hour. Put tray in a hot oven (220Deg Celsius) and Bake until cooked this is approx 1/2 hour. Let cool off on rack- Glaze a couple of times with butter and generously sprinkle with icing sugar(powdered sugar).
