Recipe(tried): Cinnamon Banana Oat Bread (Bread Machine)

This is one we make often ...my granddaughter LOVES it toasted. So whenever we have extra bananas ... I make it and freeze it until we go to visit them!

CINNAMON BANANA OAT BREAD

1-1/2 lb loaf

1-1/4 cups mashed banana
1-1/2 eggs
3 tablespoons oil
1/4 cup molasses
1-1/2 teasp salt
1-1/2 teasp ground cinnamon
1 cup oatmeal (quick or regular - not instant
1 cup whole wheat flour
2 cups bread flour
2-1/2 teaspoons yeast

Place ingredients in your bread machine in order directed in your bread machine manual. If possible set for whole wheat setting -- otherwise you will get a very dense loaf.
Note - the basic recipe is from Melissa Clark's THE BREAD MAHINE COOKBOOK. We add more cinnamon and also I do not measure 1-1/2 eggs ... if my eggs are medium or large I put in 2 - if extra large I put in one -- and then, after about 3 minutes I adjust by adding a bit more flour, etc.
