CITRUS PASTA CAPRICE
1 lb rotelle (spiral) pasta
1 tbsp yellow food coloring (optional)
FOR THE DRESSING:
juice and zest of 1 orange
juice and zest of 1 lemon
juice and zest of 1 lime
1 tbsp Dijon mustard
1 tbsp granulated sugar, optional
1 tsp dry oregano, fresh can be used
1/3 cup extra virgin olive oil
salt and pepper (to taste)
FOR THE SALAD:
2 lb cherry tomatoes, halved
1 lb fresh mozzarella, boccocino or cherry size
1 green bell pepper, diced small
1 red onion, diced small
fresh basil, chopped (for garnish)
Boil pasta in enough salted water, if desired add 1 tbsp yellow coloring to dye the pasta yellow. Drain. Drizzle some oil and let cool.
In a bowl mix the juices of the citrus with mustard, sugar and oregano. Whisk in the oil a little at a time to create and emulsion. Season the dressing with salt and pepper to taste.
Mix the pasta, dressing and remaining ingredients together. Serve cold. Garnish with basil, if desired.
