Recipe(tried): Mango Bread

Mango Bread

Yield: 2 loaves

2 cups flour -- sifted
2 teaspoons ground cinnamon
2 teaspoons soda
1/2 teaspoon salt
1 1/4 cups sugar
2 large eggs
3/4 cup oil
2 1/2 cups mangos -- chopped, ripe
1 teaspoon lemon juice -- fresh
1/2 cup raisins

Combine the flour, cinnamon, soda, salt, and sugar. Beat the eggs with the oil and add to the flour mixture. Blend in the mangoes, lemon juice and raisins.

Turn into 2 greased 8 x 4-inch loaf pans and bake at 350 degrees for 1 hour, or until wood pick inserted in the center comes out clean.

NOTES : May use lime juice instead of lemon and sub coconut for raisins. May want to decrease the amount of oil used, use 1/2 applesauce or 1/2 lemon yogurt.
