Recipe: Classic Lobster Salad

as served in New England (from The Joy of Cooking):

1 cup cooked lobster meat
marinated in
1/4 cup french dressing (oil & vinegar)
Mix with 1 cup finely chopped celery (purists use less of this!)
and
1/2 cup good mayonnaise. (you may mix in 2 T. dry sherry)

Mix lightly, chill and serve on finely cut lettuce. The important thing to remember is to keep the lobster chunks as whole as possible.
