COATING FOR OVEN FRIED CHICKEN
1 tablespoon margarine or butter, softened
2/3 cup Bisquick baking mix
1 1/2 teaspoons paprika
1 1/4 teaspoons salt
1/4 teaspoon pepper
2 1/2 to 3 1/2 pound broiler-fryer chicken, cut up
Grease rectangular pan, 13x9x2 inches, with margarine.
Mix baking mix, paprika, salt and pepper; coat chicken. Place chicken, skin sides down, in pan.* Cover and refrigerate up to 24 hours.
WHEN READY TO COOK:
Heat oven to 425 degrees F.
Bake uncovered 35 minutes. Turn chicken; bake until done, about 15 minutes longer.
*Chicken can be baked immediately. Do not grease pan. Heat margarine in pan in oven until melted. Place coated chicken, skin sides down, in pan. Bake as directed.
