Only Taco-Tico recipe I could find.
TACO-TICO CHICKEN

1/2 tsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. garlic powder
1/8 tsp. ground red pepper
6 (6 ounce) skinned chicken breast halves
Vegetable cooking spray
1 (14 1/2 ounce) can no-salt-added whole tomatoes, undrained and chopped
1/2 cup sliced green onions
1/4 cup sliced ripe olives
1 Tbsp. golden tequila
1 tsp. seeded chopped jalapeno pepper
2 tsp. cornstarch
2 Tbsp. water
1/4 cup plus 2 Tbsp. lowfat sour cream
1/4 cup (1 ounce) shredded 2% milk cheddar cheese
2 Tbsp. chopped fresh cilantro
Combine first 4 ingredients; sprinkle over both sides of chicken.
Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add chicken; cook 2 minutes on each side or until browned. Remove chicken from skillet. Drain and pat dry with paper towels.
Return chicken to skillet. Add tomato and next 4 ingredients. Bring to a boil. Cook 1 minute or until slightly thickened, stirring constantly. Spoon over chicken; top with sour cream, cheese and cilantro.
Makes 6 servings.
Nutrition Information Per Serving: 207 calories, 27.8g protein, 8g carbohydrate, 6.8g fat, 2.6g saturated fat, 78mg cholesterol, 155mg sodium and 2g fiber.
