COKE & CHICKEN
2 medium onions, chopped
cup Coca-Cola Classic
cup ketchup
2 tablespoons vinegar
cup fruit-sweetened apricot or peach preserves
2 tablespoons Worcestershire sauce
teaspoon chili powder
4 to 4 pounds chicken pieces
3 medium sweet potatoes, peeled, cut into -inch chunks
In a heavy saucepan, combine onions, Coca-Cola, ketchup, vinegar, preserves,
Worcestershire and chili powder. Bring to a boil, reduce heat and simmer, covered, 30
minutes or until sauce is thickened, stirring occasionally. Preheat oven to 350 degrees.
Arrange chicken pieces in ovenproof casserole dish. Arrange sweet potatoes around
chicken. Pour sauce over all. Bake 1 hour.
